Not Your Mama’s Beef Stew

Everyone has a favorite stew recipe for winter. I typically make one with carrots and potatoes, but created this one for a fun twist on beef stew!

2 lb stew meat
1 butternut squash, cubed
2 pears, cubed
I chopped onion
5 cloves garlic
2 in minced ginger
2 cups stock
Sea salt and cinnamon to taste

On medium heat, in a large stock pan, brown meat and onions, garlic, ginger. Then add stock, pears, and veggies, and let come to simmer. Cover and cook around 45 min. Top w fresh herbs if desired (I used fresh thyme).
