Unrefined Bakery Is an Unexpected Delight

Today I had the unexpected pleasure of experiencing some delectable treats from Unrefined Bakery in Frisco, Texas. I had heard about this bakery from a few of my healthy foodie-type friends, but had never made the trip, as it is not in my usual stomping ground. I had sampled gluten free and paleo baked goods in the past, and have usually been fairly disappointed. With my more “regular” eating teen children in tow, we ordered a variety of items from the menu, including: paleo sandwich bread, paleo morning muffins, gluten free chocolate sandwich cookies, and a gluten free iced sugar cookie. The first item tasted was the chocolate sandwich cookie. It is divine! It is more of a soft baked gluten free cookie sandwich, with icing in the middle, than a hard cookie. My daughter couldn’t believe how creamy and rich the icing was, as the sweet employee shared that it was dairy free as well!  In fact, Unrefined is 99% dairy free and also 99% corn free (the exception being their corn bread), as well as 100% gluten and soy free! All their delicious baked goods are made without preservatives or chemicals. I couldn’t believe it! This is a true allergy free bakery right in the suburbs of Dallas!

We had trouble saving the rest of our order until we arrived home, but I had purchased the bread and muffins frozen to keep longer if needed. At home, we caved and gobbled up the scrumptious iced sugar cookie. My son couldn’t believe it was gluten free, as he thought it was the best cookie he had tasted! I had been told that even the cookies were made with organic and non-GMO  ingredients- even the sugar!

Although my whole family agreed that the sweets were delicious, the true test came when I sampled the paleo sandwich bread. Grain free is much harder to master than gluten free, in my opinion. I followed the instructions on the handout in my order for warming the bread from frozen and toasted one pre-sliced piece and microwaved another. I spread the toast with butter and was pleasantly surprised. With a base of almond, tapioca and flax seed, it had a nutty, yet mild flavor. I felt that it could have had a bit more salt, but simple added a bit of salted butter and this was fine. My microwaved slice came out perfectly moist, soft, yet held its shape and butter well. My husband also enjoyed a slice, and had two more with our dinner stew. This is the first paleo bread that we will buy a second time, as it really is a delicious product.
