Fruity Truffles

1 c walnuts
1 c hazelnuts
1/2 banana
1-2 to 1 c chopped fresh strawberries
1/2 c shredded, unsweetened coconut, plus some for rolling
3 T chia seeds
3 T melted coconut oil
8 medjool dates, pitted

Place dates in food processor and pulse until smooth. If date mixture is too dry, add 1 T of water and resume pulsing. Add banana, strawberries, nuts, chia, oil and coconut. Pulse a few times to combine, until the mixture is combined but still has a few chunks. Line a plate with wax paper and roll small balls (Tbsp size) with your hands. Roll in coconut and place on plate. Refrigerate for 1 hour and serve. Enjoy!
